Production and evaluation of new products prepared from date peel

Date is an important fruit that grows mainly in the Middle East countries. During production of different date products; jam, candied and cookies, removing of the outer layer (peel) is very important, it represent 35% of the total weight. Optimizing the utilization of this peel(waste) is one of our most consideration. An intial step towards the use of the peel in different area is a characterization of this peel from different point of view. The chemical composition of the peel constituted of 8.7% protein, 2.8% ether extract, 14.7% crude fiber, 3.8%ash, 57.7% carbohydrate and 12.3% moisture content. Also, chemical analysis showed that date peel contain considerable amount of dietary fiber and mineral salts. The dietary fiber constitute mainly of neutral dietary fiber 14.01%, Acidic dietary fiber 9.73%, cellulose 5.27%, hemicellulose 4.28% and lignin 3.11%. Using of date peel in production of jam and oookies showed good results with high acceptability by the panelists to the new products.
