| Saccharomyces cerevisiae is one unicellular model eukaryotic microorganism and frequently used in wine fermentation, whereas sometimes it may become contaminant species in milk, juice, cheese, etc. To discover the effect of electromagnetic treatment on physiological situation of S.cerevisiae in food industry, the changes of quantitiy of free radical and mitochondrial function of yeast cells exposed under static magnetic fields (SMF) were determined. The results of Laser Scanning Confocal Microscopy(LSCM) showed that SMF would increase the function of mitochondria but cycling magnetic treatment would decrease the fluorescence, and fluorescent microscopy photos showed the MF would diminish the fluorescence of free radical,whereas the cycling magnetic treatment would not affect fluorescence of free radical significantly. The superoxide dismutase (SOD) and catalase (CAT) activity increased also when magnetic intensity was set as 0.1-0.2 Tesla. It proved that the SMF could improve activity of antioxidant enzymes by elongation of treating time,and increase the function of mitochondria.On the contrary, cycling magnetic treatment would ruin the mitochondrial function and not affect the free radical content. |
