| We have been making changes in the laboratory portion of the course, Topics of Physical Science, a general education course for non-majors. One major goal is to explain to our students how scientists “do” science given that non-majors often have misconceptions about the work of scientists. Since we are bombarded with information about foods in our diets and what is good and what is bad for our health, we have decided to focus on fats in our diet. We have developed a laboratory activity using proton NMR spectroscopy to analyze cooking oils and fats for our non-majors course. We will discuss our results which will include comments from our students. We want to thank Frank Contratto of Anasazi Instruments Inc. and Amy Abe of Lake Forest College for giving us the idea for this laboratory activity and the National Science Foundation for their generous support of this project. |
