M. citrifolia L. (noni) leaf is an increasingly popular dietary supplement and food. Leaf protein was evaluated for allergenic potential in a simulated gastric fluid system. The resistance to pepsin digestion at various incubation times was determined through SDS-PAGE. Noni leaf proteins were readily digested at all incubation times. As allergenic proteins are resistant to pepsin digestion, the results of this investigation indicate that noni leaf is not allergenic.
